Eggless mango cake is soft, spongy

Cooking Method :   

  3/4 Cup Fresh Mango Pulp

  3/4 Cup All Purpose Flour (Maida)

  1/4 Cup Oil

  1/3 Cup Powder Sugar

  1Tsp Baking Powder

  1/4Tsp Baking Soda

  1/4Tsp Salt

  1/2Tsp Mango Essence (optional)

Grease 5 inch cake mould with butter and dust some maida.

Prepare cake mould like this.

Mix oil and sugar.

Add mango pulp and mix well.

Sieve maida, baking powder, baking soda and salt.

Mix it gently. If needed add 1-2 tbsp milk.

Add mango essence.

Pour the batter in the greased cake mould.

Tap the mould.

Bake cake in a preheated oven at 180 C for 25-30 minutes.

Take the cake out and check with a toothpick.

Allow the cake to cool and demould it.

Decorate the cake as shown or as desired.
