Rabri Malpua

Pushkars famous Rabri Mava Malpua is a famous traditional rajasthani sweet dish which is generally prepared in rainy season.It is rich in taste. Enjoy the monsoons relishing these flavourful malpuas.



Preparation And Cooking Time

Cooking Method :   

For Malpua-

  250 ml Full Cream Milk

  125 Gram Maida

  2 tsp Curd

  100 Gram Crumbled Mava/ Khoya

  1/2 Tsp Cardamom Powder

  A Pinch of Yellow Food Colour

For Rabdi-

  1 Liter Full Cream Milk

  1/2 Cup Sugar

  1 Tbsp Pistachio Flakes

  Few Strands of Saffron

Mix well maida, mava and gradually add milk.

Blend the mixture to make it lump free.

Add yellow food color and mix well.

The consistency should be like this.

Cover and keep it aside for 10-15 minutes.

Add curd and mix well.

Drop a spoonful batter in a flat bottom pan filled with oil up to 1inch.

Fry in hot oil on medium flame.

Fry till the sides turn brown in color.

Take them out on a plate.

For rabdi, add milk in a kadai and boil.

Stir with a spoon and gather the malai formed on the sides of the kadai. Do this process on medium flame.

Scrap the gathered malai and add in the milk.

Cook for 5 minutes more, add sugar and cook.

Add saffron.

Add pista. Switch off the flame and let it cool completely.

Add cardamom powder in the sugar syrup and dip the malpuas in sugar syrup.

Take the malpuas on a plate, spread rabri and sprinkle pistachios and saffron strands.
