Mint Pudina Biryani

Mint Biryani is all together a different version of biryani. It is rich and spicy in taste. It is accompanied with raita and papad. It is a perfect meal for family and friends.

Cooking Method :   

  1 Cup Basmati Rice (Soaked for 20 minutes)

  2 Cups Fresh Mint Leaves

  1/2 Cup Fresh Coriander

  100 Gram chopped Paneer (Cottage Cheese)

  1/2 Cup Chopped Carrots

  1/2 Cup Chopped Onion

  1/4 Cup Cashews

  1 Cup Beaten Curd

  4-5 Green Chili, 1 Inch Ginger

  1 Tsp Salt

  3 Tbsp Pure Ghee (Clarified Butter)

  Whole Garam Masala(1 Bay leaf, 4-5 cloves, 7-8 black pepper, 1 Black

Cardamom, 1 Inch cinnamon stick)

Add mint leaves, fresh coriander, lemon juice, green chili, ginger and make a fine paste. Add water if needed.

Heat 1tbsp ghee and add whole garam masala.

Add 2 cup of water, 1tsp salt, cover it and bring to boil.

Add soaked rice, cover and cook it partially.

Transfer it on other stove and take another pan.

Heat 2tbsp ghee and fry cashews for 2 minutes.

Remove from heat. Fry carrots in ghee for 2 minutes.

Remove from heat. Fry paneer for 2 minutes.

Meanwhile check the rice. Remove from heat.

Add onions in rest of ghee. Again check the rice. Now they are done.

Switch off the flame of rice. Cover it properly.

Add mint paste in onions.

Add beaten curd and mix well.

Cook till the fat separates.

Add boiled rice, fried carrots, paneer and cashews. Mix gently.

Switch off the flame and cover it for 10 minutes.

Homemade Mint Biryani is ready to eat.
