Shahi Gulabjamuns are made using mava or khoya which is available in the market and stuffed with saffron and pistachios and the goodness of whole wheat flour. By following this video recipe you can make vary soft and mouth melting gulabjamuns.
Add sugar and water in a
pan. Cook till sugar melts properly.
After it cook on low flame for 6-7 minutes.
Your one thread sugar
syrup is ready for gulabjamun.
Add cardamom powder and
saffron in sugar syrup and cook for a minute. Switch off the flame.
Heat ghee (clarified
butter) in a pan on low flame.
Crush saffron in a
Grate mava and paneer in
a big vessel.
Add crushed saffron,
cardamom powder and 1 pinch of baking powder in grated mava and paneer.
Add flour and mix well. Knead
it like a dough. Add 1 tsp ghee and knead again.
Mix cardamom seeds and
pistachio flakes in a bowl for stuffing.
Take a small portion from
the dough, stuff a cardamom seed and a pistachio flake in the balls and give a
round shape. Make sure there are no cracks on the balls.
Fry in hot ghee
(clarified butter) on low flame. Don't touch them directly. Give a stir to
When balls turn light
brown then roll them in hot ghee. Continuously stir them so that they are
cooked evenly from all sides.
When they get dark brown
color. Take them out. Immediately soak them in hot sugar syrup.
Give a stir and soak them
for one hour in sugar syrup.
