Vegetable Cutlets

Mix Vegetable Cutlets are very popular snack. These are crispy and easy to make. These are crisp outside and soft inside and are a perfect treat for kitty party and tea time.

   3 Medium-sized Boiled Potato

   1/2 Cup Green Peas

   1/2 Cup Cauliflower florets

   1/2 Cup Chopped Carrot

   1/2 Cup Chopped French Beans

   1/2 Cup Rice Flour/ Semolina

   1/2 Cup Dry Bread Crumbs

   1tsp Black Pepper Powder

   1tbsp Grated Ginger

   1tbsp Lemon Juice

   2 Chopped Green Chili

   1tsp Red Chilli Flakes

   Salt to Taste

Boil all the vegetables for 5-7 minutes.

Check with a toothpick. Switch off the flame when they are half done.

Drain out the water and allow the vegetables to cool.

Don't throw the water as this can be used as vegetable stock.

Take all the boiled vegetables in a bowl. Add salt, red chilli flakes, black pepper, lemon juice, ginger, green chilli, rice flour and potato. Mix and mash with hands.

Fill the dough in a heart shaped or any desired mould. Press and take out gently as shown in the video.

Coat with bread crumbs and keep in fridge covered for 1-2 hours.

Take out from the fridge and deep fry in hot oil on high flame. Take them out on a plate.

Enjoy homemade fresh & crispy vegetable cutlets.
