Mushroom Butter Masala

Restaurant style mushroom butter masala is delicious and easy to make at home.

  400gm Sliced button mushroom

  1+1/2 Cup fresh tomato puree

  3/4 Cup onion paste (1big onion+2 green chilli+1inch ginger)

  1/2 Cashew paste

  1/2 Cup Fresh cream / Malai

  1tbsp red chilli powder

  1/4 tsp turmeric powder

  1tbsp coriander powder

  1tsp salt or to taste

  1Cup oil for frying + 3tbsp oil for gravy

  Whole garam masala- 1 bay leaf, 1 inch cinnamon stick, 1 black cardamom

  Fresh coriander

Fry sliced mushroom in hot oil in two batches for 2-3 minutes on high flame.

Remove the excess oil from the pan.

Add onion paste and cook for 2-3 minutes on medium flame till oil releases.

Add bay leaf, cinnamon stick and cardamom.

Add red chilli powder, turmeric powder, coriander powder and cook for 1-2 minutes.

Add tomato puree and mix well.

Cook for 2-3 minutes on medium flame.

Add cashew paste and allow to cook for 7-8 minutes on low flame.

Add fresh cream and mix well on high flame.

Cook till cream releases its own fat.

Add 1 cup of water and cook on low flame for 10-12 minutes. Stir occasionally.

Add fried mushrooms, butter and salt. Give a stir.

After 5 minutes all the fat has come out and the gravy looks delicious.

Switch off the flame and garnish with fresh coriander.

Relish with naan and chapatti!!
