Easy and quick to make, healthy Kanchipuram Idli (steamed food) Good as breakfast and for kids lunchbox. There is no need of sambhar and can be eaten with any dip (chutteny).
2 Cup Fermented Idli Batter
1Tbsp Grated Ginger
2 Tbsp Chopped Cashew Nuts
1 Tsp Finely Chopped Green Chilli
¼ Tsp Turmeric Powder
1 Tsp salt or to taste
1 Tbsp Clarified Butter
½ Cup Fresh Curd
Heat ghee in a pan. Add ginger, green chilli and cook for a minute.
Add cashews and saute for a minute.
Add turmeric powder and cook for a minute. Switch off the flame.
Now add salt and curd in idli batter and mix well.
Add prepared tempering and mix well.
Fill the idli batter in greased idli moulds. Steam them for 10 minutes on
high and 5 minutes on low flame.
Remove from heat, allow to cool for 5 minutes, demould and enjoy with
coconut/ tomato peanut chutney.
