For Jalebi batter- 1 cup maida (APF), 1tbsp besan (gram
flour), 1 pinch orange food colour, 1 pinch baking powder
For batter- add maida, besan, food colour and make a smooth
batter using 180 ml warm water. Cover and keep this batter for one hour in warm
Add citric acid and saffron strands in sugar syrup, prepare one
thread consistency. Switch off the flame.
After one hour add baking powder in the batter, mix well and
fill this batter in piping bag.
Make jalebi in a flat bottomed pan and
soak in sugar syrup immediately. Soak for few seconds and take out on a plate.
Important Tips :-
-Jalebi batter should be of one ribbon consistency.
-Oil/Ghee for frying should not be more than 1inch in the pan.
-After frying, immediately soak jalebis in the sugar syrup.
-Sugar syrup should be little hot for soaking.
