Here I have given a twist to the Aloo Bhujia with mint which gives a refreshing taste. It is tangy, refreshing and spicy. Aloo pudina can be enjoyed with tea. It is very easy to make the recipe. It can be stored for a long time.
1/2 cup Mint Leaves (pudina Leaves), 1 inch ginger, 2-3 green chili
2 cup gram flour (besan)
1 tsp black pepper
1 tsp salt or to taste
1/2 tsp clove powder
1 + 1/2 cup boiled and grated potato
2 tbsp oil
1/2 tsp red chili powder, 1/2 tsp salt, 1/4 tsp citric acid
Make a paste of Mint leaves, ginger and green chilli in a mixer jar. Sieve
Add boiled potato, Gram flour, black pepper, clove powder, salt and oil.
Make a soft dough using mint, ginger, chilli paste. If needed add more gram flour.
Grease the dough with oil.
Take a fine sev maker disc, grease the disc and sev maker with oil.
Fill the sev maker with prepared dough.
Press out sev in hot oil, and immediately turn the sev.
When it gets completely cooled, gently crush it.
