Gajrela is a traditional Punjabi sweet dish, which is quick and easy to make. You can serve it hot or cold. Here i am presenting it as a international dessert.
1/2 liter Full Cream Milk
1/2 cup Grated Carrot
1 tbsp Coarse Rice Paste (used soaked rice)
1/4 cup Condensed Milk
1/4 cup Sugar
1/4 cup Cashew Nuts
1/4 tsp Cardamom Powder
1 tbsp Clarified Butter (ghee)
Heat ghee in a heavy bottomed pan and roast cashew nut on low flame.
Take out them.
Add carrot and roast for 5 minutes on low medium flame.
Add milk and stir it occasionally on medium high flame for 10 minutes.
Add rice paste and boil for more 10-12 minutes on low medium flame.
Add Condensed milk and mix well.
Add Sugar and cook for 5 minutes more on high flame.
On getting desired consistency switch off the flame. Add cashew nuts and
cardamom powder and mix.
You can serve hot or cold.
