Sabz Palki

Sabz Palaki... A Royal twist to regular Vegetables.... I made this by combining vegetables and adding them in the spinach gravy to give it a new taste. It is a royal and rich vegetable.

2 bunch of Spinach

1/2Cup blanched Green Peas, 1/2Cup blanched Carrot, 1/2Cup blanched Cauliflower, 1/2Cup blanched Potato

1/4 Cup Chopped Capsicum

1/2 Cup roughly chopped Onion

1inch roughly chopped Ginger

7-8 Garlic Cloves and 2 Green Chilis

1/2 Cup Beaten Curd

1/2 Cup Fresh Cream

1tsp Salt, 1/2 tsp Cumin Seeds, 1tsp Coriander Powder, 1tsp Red Chili Powder, 1 Cinnamon Stick and 2 Bay Leaves.

Heat 2tbsp oil in a pan.

Crackle cumin seeds, add cinnamon stick and bay leaf.

Add ginger.

Add garlic cloves and green chili and cook for 2 minutes.

Add onion and again cook on high flame for 2-3 minutes.

Add all spices and cook for a minute.

Now add curd and cook for 2 minutes.

Add spinach and cover with the lid for 5 minutes..

Remove the lid. Mix it well.

Let the water from spinach boil.

Switch off the flame and allow it to cool.

After it gets cooled, take out cinnamon stick and bay leaf and make a smooth paste in a mixer grinder.

Fry all the blanched vegetables in hot oil.

Take out all the fried vegetables on a plate.

In the same pan, add the spinach paste.

Add fresh cream, cinnamon stick and bay leaf which was removed before grinding and stir continuously.

Allow it to boil.

Add fried vegetables and mix well.

Add capsicum and cook for 2 minutes.

Enjoy hot sabz palaki with naan.
